Well, if I had a choice, I could eat eggs for every meal. They are one of my most favourite foods and love them scrambled, boiled, poached, in a omelette, just about any way, except fried! This is one of my most favourite breakfasts, a real treat!
What do you need?
2 boiled eggs
Half a smallish avocado
Bag of spinach, kale and red cabbage (a Marks and Spencer’s delight!) or you can just mix your own up together.
Simply boil your eggs to your preference and whilst the eggs are bubbling, pop the spinach mix in the microwave for 1 minute, place all the ingredients on your plate, season with pepper and voila!! All done! So easy and so so delicious and healthy! You could also add a slice of brown bread or even more yummy… rye bread to dip into your runny eggs! Writing this post is making me hungry!
