This recipe is completely delicious. It is packed full of goodness from a variety of vegetables, sweet potatoes and pulses. It is definitely one of my most favourite meals and admittedly, I don’t make this enough! I first attempted this last Christmas when we had a family gathering on Christmas Eve and I cooked this as a veggie option and it went down a treat, thanks to Jamie Oliver! It may seem like a winter dish as it is warming, however, it is so colourful and yummy that it would work perfectly any time of the year! I’m craving this now as I am writing this post!
As it does have sweet potato in it, I tend not to serve it with anything as it is quite filling, but brown rice or even quinoa would work so well as a side dish.
