Homemade Muesli

This is a delicious, healthy recipe for you muesli lovers! This is so yummy served with a little drizzle of honey and fresh berries. You could also serve it with 0% Fage yoghurt. What a fab way to start your day!!

I have tried lots of different recipes  for granola/muesli that I have found on the internet and then combined a range of ingredients from them all to make my own concoction! This is also a really yummy dessert as well as breakfast – serve over warmed fruit and it tastes just as good as a crumble mix!

To make:

2 cups rolled oats

1/2 flaked almonds (or any other nuts you like)

1/4 cup of pumpkin seeds

1/4 cup sunflower seeds

A few handfuls of raisins/sultanas or dried cranberries/apricots

2 tablespoons of maple syrup

2 tablespoons of coconut oil (melted)

1/2 cinnamon

Pinch of salt

Unsweetened desiccated coconut (optional)

How to make:

Preheat your oven to 150 degrees.

Mix all ingredients together in a mixing bowl, except the dried fruits (I add the dried fruits once I have baked the muesli as they tend to burn otherwise).

Place on a large , lined baking tray and bake in the oven for about 25 minutes.

Leave to cool before storing in a container. It probably wont last too long if you are anything like me and love muesli!
