Here is another lunch option that I really enjoy eating (please excuse the pink tupperware!!) I prepped this meal on Sunday ready to eat today.
This is haddock, with a chilli and lime seasoning, quinoa, feta and tenderstem broccoli and it is sooo delicious and healthy! I cook my quinoa in water and then season it with chilli and cumin seeds. I am obsessed with cumin and find it gives it a lovely gentle spice.
