James has been very busy over the last year or so building a pizza oven in the garden! We have had a few pizza parties and the pizzas are so delicious, however, we decided to try something a little different (and healthier!) and cook a whole chicken in it! Admittedly, we weren’t too sure on the outcome, but it was amazing! The chicken was so tender, we couldn’t help but nearly eat the whole thing between us!
This can be adapted to cook in a regular oven, all you need to do is repeat the same preparation steps and cook in the oven for 40 minutes.
We bought a whole chicken and then prepared the spatchcock using the following video for guidance:
Once you have prepared the chicken, rub it with your favourite spices or seasoning. We used a BBQ seasoning and left it to marinate for 2 hours whilst the pizza oven was heating up.
When the oven was up to heat, we placed the chicken in the oven – EXCITING!!
And here is the final product (and yes we ate most of it and my goshy it was good!)…..
This was delicious – as I said earlier, so tender and juicy (can’t wait to have it again!!!) If you are trying to be good, I would recommend not eating the skin, although this is very tricky not too when it is so tasty!
