I just really fancied some cauliflower the other evening so decided to throw this together!
You may have noticed by now that I eat a lot of chicken. I LOVE chicken and could never get bored of it, but also I don’t eat any red meat. I don’t do this for any health reasons, just for taste and the thought of it! I just don’t enjoy eating it, so it’s something I don’t eat. Having said that, I’m sure all my meals can be tweaked and switched from chicken to an alternative meat, such as steak etc.
So, this (rather random but tasty) meal was a combination of grilled chicken, yellow peppers, curly kale and grilled cauliflower. I simply popped the cauliflower in the microwave for 1 minute, just to soften it slightly and then put it in the same griddle pan with the rest of the ingredients until all ingredients were cooked through.
I served this bowl of yumminess with a portion of brown rice and sprinkled with chilli flakes :))) HAPPY DAYS!
