Feta, sundried tomato and olive canapés

I love experimenting with both sweet and savoury recipes and this one is a little different. It is perfect for entertaining, served as a little canapé or you could increase the portion size to create a tasty starter when entertaining friends and family. I was inspired to create this recipe after our holiday to Greece a few weeks ago and after eating this ‘feta dip’ most evenings (and loving it) I wanted to try and recreate my own (healthyish) version at home! So here it is! Hope you enjoy, I really could just eat the whole thing with a spoon but it’s probably best not to do that!! 

You will need: 

One packet of feta cheese (full fat) 

1 tablespoon of olive oil 

4 red jalapeño peppers from a jar

Sprinkling of mixed herbs – oregano, parsley and thyme (a little sprinkle of each combined together to make a mixture of herbs) 

Method:

Crumble the feta cheese into a microwaveable bowl into smallish chunks. 

Pop in the microwave for 20 seconds just to soften it. 

Mix in the olive oil, herbs and jalapeños and using a hand blender, whizz up the mixture until all combined and the mixture now looks like a thick dip. 

You are then ready to create the canapé! 

I used multigrain crackers as a base or cucumber (to make them healthier). Using a teaspoon, spoon a small amount of feta dip onto your canapé base and garnish with a small piece of sundried tomato and a black olive and there you have it, a delicious canapé that can be created in 10 minutes (and devoured in 5 hehe). 

I served this canapé as part of an afternoon tea party (see pictures below). I will post more recipes from the afternoon tea shortly.
