This cold weather is making me want more warming vegetables and this week I have had some yummy dinners, which I thought I would share with you!
Below is harrisa seasoned oven baked chicken, with quinoa, curly kale, sprouts AND turmeric roasted cauliflower. Lots and lots of veg but you can never have enough!! It was so delicious and warming.
For the cauliflower, I simply sprinkle it with turmeric and then roast it on a baking tray in the oven, on 180degrees, for about 20 minutes. Yummy!
I also sprinkling the quinoa with chipotle chilli flakes (from Sainsburys).
Such an easy dinner, so healthy and so satisfying.
