Marvellous Mexicana

One of my favourite types of food is a mexican, however I must admit, I don’t tend to eat it that much! I really fancied fajitas the other day and therefore attempted to make my own, healthy versions and it was soooo yummy!!

I had seen sweet potato wraps recently in the supermarket by BFree Foods and really wanted to try them so we bought some sweet potato wraps, perfect for the mexican night!

Now on to meat! You will need: 

Plenty of chicken breasts

Selection of vegetables (peppers, red onion, celery, mushrooms)

Fry Light spray for cooking

Fajita Spice mix – you will need:

1 teaspoon of chilli powder

1 teaspoon of cumin powder

1 teaspoon of paprika

1 teaspoon of cayenne pepper

To make the spice mix, simply mix all spices together and there you have it!

To make the main event:

To make the main fajita filling, simply fry your vegetables and chicken in a pan, with frylight, adding the spice mix and leave to cook for a while until all meat and vegetables are browned. If you add mushrooms, you will find you get a little bit of juice, which is actually quite nice 🙂

To serve: 

Serve with crumbled feta or goats cheese, a green salad, salsa and a good old guac! You are then ready to make up your fajitas!

To make guac – simply mash an avocado with lime juice and chilli flakes and there you have it 🙂

This is such a quick and easy dinner and is a perfect dinner with friends where you can all just tuck in to what you want. You can swap your meat to steak or even prawns and would still work a treat!
